Burgundian conditions in the south of France: The Chardonnay of Domaine de l'Aigle grows in the high altitudes of Limoux at over 400 meters — cool enough to retain acidity and freshness, which is not a given in the Languedoc.

Gérard Bertrand, one of the most influential winemakers of the Languedoc, has specifically developed Domaine de l'Aigle for white wine production. The combination of clay-limestone soils and the cool climate of the Pyrenean foothills results in a Chardonnay that is stylistically more reminiscent of the Côte de Beaune than the sun-drenched south.

In the glass, it displays ripe yellow pear and white peach, along with a hint of hazelnut and a fine mineral note on the finish. The acidity remains present, giving the wine vibrancy without being harsh. Medium-bodied, creamy texture, clean finish.

Serving temperature 10–12 °C. Pairs well with grilled sea bass with herb butter, chicken breast in white wine sauce, or a mature Comté cheese. Also a good choice as an aperitif. Drink by 2027.
