Domäne Wachau Himmelstiege Grüner Veltliner Smaragd

The Himmelstiege vineyard is one of the steepest sites in the Wachau region — terraces of ancient rock, almost impossible to cultivate mechanically. What grows there has substance.

Domäne Wachau is a winegrowers' cooperative with over 700 members who collectively cultivate around 450 hectares of steep slopes between Spitz and Krems. Founded in 1938, it is today one of the leading names in Austrian white wine culture. Domäne Wachau stands for traditional, unpretentious winemaking: varietally typical, with a focus on aging, and no manipulation in the cellar.

Smaragd is the highest quality level in the Wachau region—dry, with a minimum alcohol content of 12.5% ​​ABV, and typically made from late-harvested, fully ripe grapes. The Himmelstiege Grüner Veltliner demonstrates what this means: a spicy peppery note (the classic hallmark of the variety), along with aromas of yellow apple, quince, and a mineral hint of bedrock. On the palate, it is dense, with lively acidity and a long, slightly salty finish.

Serving temperature: 10–12 °C. Drinking window: now until 2030+. At the table, it pairs well with Viennese veal Tafelspitz, roasted guinea fowl breast, or a mature mountain cheese. For a more international experience: sushi with oily fish or a creamy risotto with white asparagus.
