The Himmelstiege is one of the steepest sites in the Wachau — terraces of primary rock, barely possible to farm mechanically. What grows there has substance.
The Domäne Wachau is a winegrowers' cooperative with over 700 members who together farm around 450 hectares of steep slopes between Spitz and Krems. Founded in 1938, it is today one of the defining addresses of Austrian white wine culture. The Domäne stands for artisanal vinification without frills: varietally typical, site-focused, no over-processing in the cellar.
Smaragd is the highest quality level in the Wachau — vinified dry, with a minimum alcohol content of 12.5% vol., and usually from late-harvested, fully ripe grapes. The Himmelstiege Grüner Veltliner shows what that means: spicy pepper note (the classic trademark of the variety), plus aromas of yellow apple, quince, and a mineral hint of primary rock. On the palate, dense, with lively acidity and a long, slightly salty finish.
Serving temperature: 10–12 °C. At the table, it pairs with Viennese boiled veal (Tafelspitz), fried guinea fowl breast, or a mature mountain cheese. For those who prefer it more international: sushi with fatty fish or a creamy risotto with white asparagus.
