Appassimento from Apulia: Grapes that are dried in the sun before fermentation lose water and concentrate sugars, aromas, and color. The result is a red wine with more body and depth than the price would suggest.
Cielo e Terra works with grapes from Salento , the sun-drenched peninsula at the southern tip of Apulia. The region is known for its old bush vines, high levels of sunshine, and deep clay soils—ideal conditions for the appassimento method.
In the glass, the Gran Maestro displays a deep ruby red with slightly brown reflections—a typical sign of the oxidative drying phase. The nose offers aromas of baked plum, dried cherry, and a hint of cocoa. On the palate, it is soft and full-bodied, with a pleasant warmth and smooth, rounded tannins. The finish is long and slightly sweet.
Serving temperature 16–18 °C. Pairs well with grilled lamb , pasta al ragù, spicy pecorino cheese, or dark chocolate. Also enjoyable as a casual evening wine on its own.

How does the Gran Maestro taste — is it really as sweet as Appassimento sounds?
Vinified dry, but with a slightly sweet finish that comes from the Appassimento process. In the glass: prunes, dried cherry, and a hint of cocoa — full-bodied, soft, with round tannins without edges.
What does the wine pair best with?
Classically with grilled lamb, pasta al ragù, or spicy Pecorino. Dark chocolate also works well. Those who drink it without food get an uncomplicated evening wine with real melt.
At what temperature should I serve it?
16–18 °C — i.e., slightly cooler than room temperature. At warmer temperatures, the alcohol (14.5% vol) comes to the fore more strongly and masks the fruit.
What does Appassimento mean exactly — does it make the wine heavier?
The grapes dry in the sun before fermentation, losing water and concentrating sugar, aromas, and color. The result is more body and density than a classically vinified Primitivo — but not Amarone level.
How long can I store the wine?
The Gran Maestro is designed for accessibility, not long aging. Stored cool, dark, and lying down — ideal conditions for any red wine — it remains in good shape.
The Winery
Cielo e Terra has 2 origins in Veneto: the Cielo family and the winemakers of Cantine Colli Berici. The story of Cielo e Terra began in 1908 when the Cielo family bought land in Vicenza, near the Castelli di Romeo e Giulietta, which also included a small vineyard, Casa Defrà. In 1960, the winery was founded in its current form as a cooperative and an Italy-wide distribution network was established.
Today, Cielo e Terra exports to over 60 countries, consists of over 1000 winemakers with 3700 hectares of cultivated land, and is a leader in the field of sustainability.
