From the steepest point of the Rheingau into the bottle: The Rüdesheimer Berg Schlossberg is one of the most demanding sites in the entire region — and this Pinot Noir shows what quartzite soil and manual labor can extract from it.

Kloster Eberbach is one of the oldest wine-growing estates in Germany, with roots in the 12th century. The steep vineyards on the Berg Schlossberg, named after the Ehrenfels castle ruins built in 1211, drop at an incline of up to 70% — machine use is impossible, every grape is harvested by hand.

In the cellar: complete destemming, open mash fermentation, 20 months of aging in large wooden barrels, unfiltered bottling. The result is a Pinot Noir with real substance: aromas of Morello cherry and blackcurrant, underscored by spicy, almost peppery notes. The tannin structure is expressive and firm, carried by high concentration — not a wine for impatient drinkers.

Drinking temperature 16–18 °C. Pairs with game goulash, braised lamb shank, or mature hard cheese like Comté or mountain cheese.
