From the steepest point of the Rheingau to the bottle: The Rüdesheimer Berg Schlossberg is one of the most demanding sites in the entire region — and this Pinot Noir shows what quartzite soil and manual labor can bring out of it.

Eberbach Monastery is one of the oldest winegrowing estates in Germany, with roots dating back to the 12th century. The steep vineyards on the Schlossberg mountain, named after the Ehrenfels castle ruins built in 1211, slope down at gradients of up to 70% — the use of machinery is out of the question; every grape is harvested by hand.

In the cellar: complete destemming, open-vat fermentation, 20 months of aging in large wooden casks, unfiltered bottling. The result is a Pinot Noir with real substance: aromas of Morello cherry and blackcurrant, underpinned by spicy, almost peppery notes. The tannin structure is expressive and firm, supported by high concentration—not a wine for impatient drinkers.

Serving temperature 16–18 °C. Drinking window extends for several years. Pairs well with venison goulash, braised leg of lamb, or mature hard cheeses such as Comté or mountain cheese.
