A Riesling sparkling wine from the Mosel that shows what the grape variety can achieve in terms of perlage: taut acidity, clear fruit, mineral depth.

Maximin Grünhaus is one of the most renowned addresses on the Mosel. The winery is located in the Ruwer Valley, a tributary of the Mosel, and has been cultivating the steep slopes around the former Benedictine monastery of Grünhaus for centuries. The von Schubert family has been running it since 1882 and is known for Rieslings with precise structure and distinct minerality — characteristics that are also reflected in this sparkling wine.

In the glass, it shows a fine, persistent perlage. On the nose, ripe pear, green apple, and a hint of lime zest. On the palate, the Riesling acidity brings tension without being sharp — a Brut dosage that keeps fruit and dryness in balance. The finish is fresh, slightly mineral, with a pull reminiscent of Mosel slate.

Serve it well chilled at 7–9 °C as an aperitif or with appetizers with a citrus note — ceviche, prawns with herb butter, or a light goat cheese salad go well with it.
