Glendalough Calvados XO Single Cask Finish Irish Whiskey

An Irish single malt with an unusual finish: Glendalough from the valley south of Dublin lets this whiskey mature in ex-Calvados casks made of French oak for the final stage — Norman apple brandy was stored there for six years before the Irish whiskey moved in.

Founded in 2011, the Glendalough Distillery specializes in handcrafted Irish whiskeys. Single cask bottlings with unusual cask finishes are at the heart of their program – not mass-produced, but rather small-scale production with a clear origin.

In the glass: fresh apple and pear notes from the Calvados influence, underpinned by the typical Irish smoothness—creamy vanilla, light honey, a hint of oak. The finish brings subtle spice and a light fruitiness that lingers.

Serving suggestion: Neat at room temperature to fully appreciate the barrel finish. If desired, add a drop of still water – this brings out the apple notes. Pairs well as a digestif with goat cheese or tarte tatin.
