It is then aged for three years in bourbon barrels and finally transferred to Irish oak casks for one year. The bourbon barrel aging imparts a smooth and sweet character to the whiskey, while the Irish oak contributes roasted aromas and subtle vanilla notes. The finished Glendalough Pot Still Irish Oak Whiskey thus displays a wide range of aromas: from sweet citrus notes to vanilla, caramel, and banana, as well as earthy herbal notes, oak, and leather.
