A Lugana that steps out of the usual framework: Back to Silence from Ottella is made 100% from Turbiana — the autochthonous grape variety of Lake Garda, which is vinified here in an unusual way. The grapes are macerated and left on the skins for longer before a significant part of the vinification takes place in amphorae. The result is not a classic Lugana, but a white wine with the texture and depth of an orange wine.

Ottella is a family winery on the southern shore of Lake Garda, managed by Francesco and Michele Montresor. The location in the Veneto, near the border to Lombardy, belongs to the core area of the Lugana DOC — characterized by clay-rich, mineral soils that give the Turbiana its characteristic spice.

In the glass, the wine shows a golden color with amber reflections. The maceration brings out aromas of dried apricot, quince, and beeswax, plus a light tannin structure that is unusual for a white wine. The finish is long, slightly tart, and characterized by a salty minerality. Serving temperature: 14–16 °C — cooler than usual, but not too cold, so that the aromatic complexity can unfold.

Pairs with grilled octopus, pasta with bottarga, or ripe Pecorino. This wine also works surprisingly well as a companion to Asian dishes with umami depth.
