Bocchino is one of the most famous names in Piedmontese grappa distillation. The house from Canelli, located in the heart of Monferrato, has been working for over a century with the pomace residues from the region's great Nebbiolo, Barbera, and Moscato harvests — raw materials that have earned Piedmont its reputation as one of Italy's most important wine regions.

Distillation follows the classic bain-marie method, in which the mash is heated gently and indirectly. The result is distillates with clear fruit, fine spice, and a long, dry finish — far removed from the harsh sharpness of cheap industrial grappa. The aged bottlings in particular, matured in small wooden barrels, develop a depth reminiscent of cognac: dried fruits, vanilla, a hint of tobacco.

Bocchino is suitable as a digestif after a Piedmontese menu — with tajarin, brasato al Barolo, or a piece of Castelmagno cheese. Those who previously only knew grappa as a sharp finish will find a different approach here: artisanal, aromatic, with a genuine connection to the wine culture of Piedmont.
