Stimson Estate Cellars Cabernet Sauvignon

Color: Deep ruby ​​red with purple highlights. Aroma: Fruity bouquet with juicy, fresh cherry aromas, hints of black olives, spices, and delicate roasted notes. Taste: Soft, fruity, and beautifully balanced; the juicy cherry and subtle roasted aromas are also noticeable on the palate. A touch of Merlot lends the wine an even smoother texture and multifaceted richness. The grapes for this Cabernet Sauvignon come from neighboring California and are first gently crushed and then traditionally cold-macerated for 24 to 48 hours. The must is then carefully heated, and the five- to ten-day fermentation begins, both in classic stainless steel tanks and in rotary fermenters. The fermenting wines are tasted regularly to ensure they are racked off the must precisely when their perfect balance of color, aromas, and tannins is achieved. The subsequent traditional aging in French oak barrels gives the wine even more depth and imparts delicate roasted and spice aromas. The final blend is only assembled shortly before bottling.
