Spier Cellars is one of the most renowned wineries in the Stellenbosch region, cultivating vineyards in the cool Atlantic climate. Their "Signature" line represents an approachable style built on solid craftsmanship: the grapes are harvested early to preserve freshness and aromatics, then aged for three months on the lees – this gives the wine more texture than is often found in this price range.
In the glass, it shines a bright yellow with greenish reflections. The nose reveals gooseberry, passion fruit, and fresh grass – the classic aroma profile of a cooler-climate Sauvignon Blanc. On the palate, it is light to medium-bodied with lively acidity that supports the fruit without being harsh. The finish is short but clean.
Best served at 8–10 °C . Pairs well with goat cheese, roasted asparagus, ceviche, or light pasta dishes with herb sauce. Also a good choice as a simple aperitif.
