Spier Signature Merlot
The Spier Signature Merlot from the Western Cape comes from the renowned Spier winery, which has been among the pioneers of South African wine culture since the 17th century. The Boucher family established one of the oldest winegrowing settlements in what is now the Stellenbosch region, and today Spier is considered a modern, sustainably oriented operation with a focus on natural ripening, high-quality grapes, and a clear, varietal style.
The wine matures for six to eight months in French barriques , which impart a subtle oak spice, along with smoke and a hint of caramel, without overpowering the juicy fruit. In the glass, clear aromas of black cherry, blackberry, and dark berries emerge, complemented by delicate vanilla and toasty notes. On the palate, the wine is medium-bodied, well-structured, and soft in tannins , with a fresh yet balanced acidity that lends it drinkability and longevity.
The finish is creamy and smooth, harmoniously long, and characterized by ripe fruit without being heavy or overpowering. Served at 16–18 °C , it fully unfolds, revealing its balance between fruit, oak, and body. It pairs perfectly with braised lamb, pasta with meat ragù, steak, or a mature cheddar. The wine is enjoyable now but will gain further depth and smoothness over the next 2–3 years.
