A Grillo that doesn't care about Sicilian clichés: no rounded fruitiness, instead maritime minerality and a structure reminiscent of the great white wines of Burgundy.

Tasca d'Almerita is one of Sicily's most renowned wineries, family-owned since 1830 and located on the Regaleali estate in the heart of the island—far from the coast, at an altitude of over 400 meters. The Cavallo delle Fate is made from the indigenous Grillo grape variety and showcases what the island is capable of at its best: depth rather than opulence.

On the nose, salty licorice and seaweed dominate, with hardly any fruit—but there's a hint of emerging spice. On the palate, the wine presents itself as compact and unified: firm extract, powerful ripe acidity, and penetrating minerality. Everything is still tightly packed, with the potential to open up. Falstaff awarded the 2016 vintage 91 points and drew a comparison to Puligny-Montrachet—not as an exaggeration, but as a structural description.

Serving temperature: 10–12 °C. Pairs well with grilled sea bass with capers, ceviche, or pasta alle vongole. If you have time, let it breathe in the glass for another 30 minutes.
