Penfolds BIN 389 Cabernet Shiraz Deep Sea Edition

BIN 389 is Penfolds' most renowned cuvée label – not a hidden gem, but a benchmark. The Deep Sea Edition 2021 comes in a matte blue bottle, reminiscent of the ocean's depths, but adheres to the same high standards as the classic BIN 389.

Penfolds has been working in South Australia since 1844 – initially in Magill near Adelaide, and today with grapes from the Barossa Valley, McLaren Vale, and Coonawarra. The blend of 53% Cabernet Sauvignon and 47% Shiraz follows the principle of "multi-district blending": winemaker Peter Gago and his team select the best batches from several growing areas each year to achieve a consistent style. Twelve months of aging in American oak – the same type of barrel used for the Grange – gives the wine its nickname, "Baby Grange."

Deep purple in the glass. The nose offers aromas of cassis, black plum, and a distinct note of coconut and vanilla from the American oak, along with eucalyptus and dark chocolate. Medium to full-bodied on the palate, with velvety tannins and a firm yet integrated acidity. The finish brings herbal spice and lingering fruit.
