White Burgundy from the Côte Chalonnaise — less famous than the great appellations in the north, but with a character of its own: taut minerality, ripe fruit, and a texture you don't always expect at this price point.

Domaine Chanson is one of the oldest houses in the Côte de Beaune, founded in 1750 in Beaune. The domaine manages vineyards in Beaune, Pommard, and Savigny-lès-Beaune — and has also established itself in the Côte Chalonnaise with Premier Cru parcels. Les Champs Martin is one of the recognized vineyards in Mercurey, on calcareous clay-limestone soil that gives the Chardonnay structure and length.

The wine shows a light gold in the glass. The nose brings ripe pear, white peach, and a hint of acacia honey, underpinned by a fine flinty spice. Dense on the palate, but without heaviness — the oak aging is present but well-integrated and does not dominate. The finish is long, with fresh acidity and a mineral aftertaste.

Serving temperature: 11–13 °C.
Pairs with: Veal medallions with morels, baked zander, poultry in cream sauce, or a mature Comté.
