White Burgundy from the Côte Chalonnaise — less well-known than the great appellations in the north, but with its own character: firm minerality, ripe fruit and a texture that one does not always expect from this price range.

Domaine Chanson is one of the oldest estates in the Côte de Beaune, founded in Beaune in 1750. The estate cultivates vineyards in Beaune, Pommard, and Savigny-lès-Beaune, and has also established a presence in the Côte Chalonnaise with Premier Cru parcels. Les Champs Martin is one of the recognized vineyards in Mercurey, situated on calcareous clay-limestone soils that impart structure and length to the Chardonnay.

In the glass, the wine displays a bright gold color. The nose offers ripe pear, white peach, and a hint of acacia honey, underpinned by a delicate flinty spice. On the palate, it is dense but not heavy—the oak aging is present but well-integrated and not overpowering. The finish is long, with fresh acidity and a mineral aftertaste.

Serving temperature: 11–13 °C. Drinking window: now until approx. 2028.
Pairs well with: Veal medallions with morels, baked pike-perch, poultry in cream sauce or a mature Comté cheese.
