A Chardonnay that shows what South Tyrol is capable of: mineral depth from limestone soils, Burgundian vinification, not a gram of gimmickry.

Cantina Andrian is located in the Adige Valley north of Bolzano, nestled between vineyards at an altitude of up to 700 meters. For decades, the cooperative has worked with winegrowing families who cultivate their plots on these lime-rich soils with great care. For the Doran, French, small-berried Chardonnay clones are used — vine material that stands for structure and concentration, not just fruit.

The vinification follows the Burgundian model: 100% fermentation in tonneaux, 30% of which is new wood. Regular batonnage integrates the wood tone and gives the wine a creamy, round texture. In the glass, aromas of yellow apple, toasted almonds, and a hint of white peach emerge — underpinned by a fine mineral line that makes the limestone soil palpable. The finish is long, slightly buttery, with fresh acidity as a counterweight.

Serving temperature: 10–12 °C. Pairs with veal schnitzel with herb butter, pasta with truffle cream sauce, or a mature mountain cheese from Trentino.
