Domaine d'Aussières Blason d'Aussières

The Blason d'Aussières is the second wine of the winery of the same name in the Corbières — more accessible than the Grande Cuvée, but with the same southern French character in the glass.

Château d'Aussières is located in the heart of the Corbières, near Narbonne, and is managed by the Rothschilds (Domaines Barons de Rothschild). The winery combines Bordeaux cellar philosophy with the rough terroir of the Languedoc: barren soils, lots of sun, the typical grape varieties of the south.

On the nose, Mediterranean garrigue — thyme, lavender, a hint of dried herbs — combined with dark elderberry and a light spice note. Aging in oak barrels gives the wine structure without dominating it: the tannins are present but round, the body full-bodied with a spicy, medium-long finish.

Serving suggestion: Decanting recommended, serve at 16–18 °C. Pairs well with lamb chops with rosemary oil, grilled merguez, or a strong fresh goat cheese.
