Château d'Aussières is the flagship wine of Domaine d'Aussières in Corbières – made from the estate's best parcels, vinified in small quantities and matured with careful oak aging.

Domaine d'Aussières lies in the heart of the Corbières, one of the more rugged wine-growing regions of the Languedoc. Garrigue vegetation, barren limestone, and hot summers shape the grapes—and thus the character of the wine. Château d'Aussières matures for 12 to 16 months in barriques, 40% of which are new. This is ample time to develop structure and complexity without obscuring the regional identity.

In the glass, it displays dark berry fruit – blackberry, black plum – underpinned by rosemary, lavender, and a hint of cedar from barrel aging. Medium to full body, ripe tannins, long, spicy finish.
