The Château d'Aussières is the top wine of the Domaine d'Aussières in the Corbières – from the best plots of the winery, vinified in small quantities and aged with careful wood maturation.
Domaine d'Aussières is located in the heart of the Corbières, one of the rougher wine-growing regions of the Languedoc. Garrigue vegetation, barren limestone, and hot summers shape the grapes – and thus also the character of the wine. Château d'Aussières matures for 12 to 16 months in barriques, 40% of which are in new barrels. Enough time to build structure and complexity without masking the regional identity.
In the glass, it shows dark berry fruit – blackberry, black plum – underscored by rosemary, lavender, and a hint of cedar wood from the barrel aging. Medium to full body, ripe tannins, long spicy finish.
