Collavini Ribolla Gialla Brut
A sparkling wine from Friuli that shows what the indigenous Ribolla Gialla grape variety can achieve: 100% pure variety, with an unusually elaborate production process for this category.
Six months of aging in small oak barrels, then 28 months in stainless steel tanks, and finally eight months of bottle aging — a total of over three years of maturation. The result: a fine, lively perlage, aromas of green apple, citrus peel and a hint of brioche, along with the fresh acidity typical of Ribolla.
Serving temperature: 6–8 °C. Pairs well as an aperitif, with seafood risotto, light fresh cheese or Friulian antipasti.

The Italian winery Collavini is located in Corno di Rosazzo, in the northeast of Italy. The company's history began in 1896 in Rivignano when it was founded by Eugenio Collavini. Since 1966, however, Collavini has been based in Corno di Rosazzo, where it is managed by Manlio Collavini. The family business cultivates a variety of grapes on a total of 170 hectares of vineyards. These include Sauvignon Blanc, Cabernet Sauvignon, Pinot Grigio, Chardonnay, and Tocai Friulano.
