Volcanic rock instead of limestone, high altitudes instead of Sicilian heat: The Cavanera Rosso Sciara del Tiglio from Firriato grows on the lava flows of Mount Etna – one of Italy's most idiosyncratic vineyards.
Firriato manages the Cavanera estates on the northern slope of Mount Etna at an altitude of over 600 meters. The porous lava ash (sciara) stores water and gives the soil a mineral character that is noticeable in the glass. The primary varieties grown here are Nerello Mascalese and Nerello Cappuccio – the classic grape varieties of Etna, which develop a cool, structure-focused style on volcanic soil.
In the glass, it shows a medium-deep ruby red. On the nose, sour cherry, dried herbs, and a distinct hint of volcanic ash – typical of its origin. On the palate, lively acidity, fine, grippy tannins, and a long, slightly smoky finish. Not a heavy Southern Italian red wine, but an elegant, cool representative of its appellation.
Serving temperature: 16–18 °C. Pairs well with grilled lamb, pasta with wild boar sauce, or a mature Pecorino Siciliano.

Firriato – a winery in Sicily, founded in 1985 by Salvatore Di Gaetano and his wife Vinizia Novara. What they have built is now one of the largest and most highly regarded wineries on the island.
