
Cavanera bianco Balza delle Poiane
Grown on the northern slopes of Mount Etna on volcanic lava rock — the Cavanera bianco Balza delle Poiane is a white wine that brings the raw minerality of the volcano straight into your glass.
Firriato is one of Sicily's most renowned wineries and cultivates vineyards directly on Mount Etna with the Cavanera estate. The high altitude ensures cool nights, slow ripening, and a distinct acid structure — unusual for Sicilian white wine.
In the glass, it displays aromas of lemon zest, white peach, and a hint of salt stone. The palate is taut, with vibrant acidity and a long-lasting, mineral-smoky finish reminiscent of cooled lava. Not a lush southern wine — rather lean, precise, with real depth.
Best served at 10–12 °C. Pairs well with grilled sea bass with capers, spaghetti alle vongole, or a young Pecorino. Also a great choice as an aperitif with seafood.

Firriato – a winery in Sicily, founded in 1985 by Salvatore Di Gaetano and his wife Vinizia Novara. What they have built is now one of the largest and most highly regarded wineries on the island. Six locations in western Sicily, encompassing around 300 hectares of vineyards on tuff and red sand. They produce 4.25 million bottles annually, three-quarters of which are exported to over 30 countries. Predominant grape varieties are Nero d'Avola and Grillo, along with Cabernet Sauvignon, Chardonnay, and Syrah.
