Rings' Calcaire Blanc de Blancs Dégorgement Tardif brut nature is a sparkling wine from the Palatinate region, produced using the traditional Champagne method – made entirely from Chardonnay grapes and bottled without dosage. The late disgorgement (Dégorgement Tardif) means extended lees aging in the bottle after the second fermentation, which imparts a pronounced brioche note and creamy texture to the wine.
On the nose, orange blossom, roasted almond, and a mineral limestone note – fitting the name. The finish is dry, salty, and long. Brut nature means: no residual sugar, no balancing with liqueur d'expédition.
Ideal as an aperitif or with oysters, ceviche, and mild goat cheese. Serving temperature: 8–10 °C.
