Calcaire Blanc de Noirs Brut Nature
Sparkling wine from the Rings winery in Kallstadt – Pinot Noir from calcareous soils, spontaneously fermented, aged on the lees in the bottle for 36 months. No sulfur, no dosage: a Blanc de Noirs in its most minimalist form.
In the glass, it displays brioche notes, a delicate citrus character, and a firm minerality that makes the limestone of the Kallstadt vineyards palpable. The perlage is fine and creamy, the finish dry and long. Aging in tonneaux and stainless steel ensures that the fruit remains precise, without being overpowered by oak.
Pairs well with oysters, grilled sea bass, or mild goat cheese. Also highly recommended as an aperitif with some bread and butter. Serving temperature: 8–10 °C.

The beginnings of today's VDP winery were laid by the parents of Steffen and Andreas Rings with a mixed agricultural business, which was run as such until well into the 1990s. From the year 2000, Steffen Rings occupied himself with the business and restructured it into a pure winery. From 2008, Andreas Rings also returned from his training at the Wagner-Stempel winery and has been running the winery in Freinsheim in the Palatinate together with his brother Steffen since 2008. On the 30-hectare winery, red and white grapes grow in equal halves. The sites have different soils - gravelly sand, Terra Rossa (red earth) and limestone - on which predominantly Riesling, Pinot Noir and international grape varieties thrive. The individual sites belong to Freinsheim, Kallstein, Ungestein and Leitstadt.
