Primitivo di Manduria Riserva DOC Paolo e Carlo Classe 1966

The Primitivo di Manduria Riserva DOC Paolo e Carlo Classe 1966 is a well-rounded, full-bodied southern Italian wine from Apulia – a Primitivo with character, neither hiding nor overdoing it. It comes from the best vines around Manduria, where the hot sun imparts deep color, ripe fruit, and considerable body to the grapes.

The wine spends 12 months in wooden barrels, giving it a beautiful, intense ruby-red color and a smooth, yet not spongy, mouthfeel. The nose reveals ripe plums, cherry jam, a touch of dried apricots, and notes of cocoa, vanilla, and a hint of coffee from the barrel aging – enough spice to be interesting, but not so much as to overpower the fruit.

On the palate, the Primitivo is velvety and opulent, with a full, warm body, fine, soft tannins, and a pleasantly fruity, almost slightly sweet character that nevertheless reads as dry or off-dry. At around 15% ABV and served at 16–18°C, it pairs perfectly with hearty beef or lamb dishes, game, savory appetizers, and strong cheeses – a wine that simply begs to be enjoyed without overthinking.

Is the wine dry or does it have residual sugar?

It is classified as dry, but appears almost slightly sweet on the palate due to the ripe fruit and soft tannins. Anyone who knows Primitivo knows: this is typical of the variety, not residual sugar.

What does the Primitivo pair best with?

With hearty meat dishes like lamb, beef, or game, but also with salsiccia, ragout, and savory pasta. Pecorino or a strong hard cheese work just as well – the wine needs substance on the plate.

At what temperature should I serve it?

Best at 16–18 °C. If it is too warm, it loses freshness and feels heavy; if it is too cold, the soft tannins and fruit do not come into their own.

How long can I store the wine?

As a Riserva with 12 months of wooden barrel aging, it is ready to drink now, but will easily last another 3–5 years. Stored cool, dark, and lying down, it will continue to develop without losing fruit.

Does the wine also go well without food – just like that in the evening?

Yes, the full body and soft tannins make it an uncomplicated evening wine. With 15% vol., it is strong enough to stand on its own – a glass with a cheese board is enough as a start.
