A sparkling wine from the Nahe region that shows what traditional bottle fermentation can bring out of Pinot Noir: fine perlage, clear structure, no compromise on origin.
Weingut Prinz Salm is one of the oldest noble houses in German viticulture and manages vineyards on the Nahe with the standards of the VDP. The grapes for this sparkling wine come from the Rosengarten in Bingen — a terroir known for its mineral character, which gives the Pinot Noir an unmistakable depth.
In the glass, it shows a pale salmon color with fine mousse. On the nose, red currant, raspberry, and a hint of brioche — typical for traditional bottle fermentation. On the palate, lively acidity, creamy texture, dry finish with a subtle minerality.
As an aperitif, with salmon tartare, light appetizers, or goat cheese. Serving temperature: 7–9 °C.

The German winery Prinz Salm is now managed in the 32nd generation and is located in Wallhausen in the Nahe region. It was probably founded around the year 1200. The owner of the winery is Michael Prinz zu Salm-Salm and calls 18 ha of vineyards his own. The soils of the vineyards mainly consist of green slate. In addition to the primarily grown grape variety Riesling, Pinot Blanc, Pinot Gris, Blanc de Noir or even Pinot Noir grapes are also processed into wines at the Prinz Salm winery. The best locations include, for example, the Wallhäuser Johannisberg or the Binger Scharlachberg. Up to 120,000 bottles of wine are produced here annually.
