Harvest period and method: From the first half of October; the grapes are harvested by hand. The production of Langhe Nebbiolo involves a 7-8 day fermentation in stainless steel tanks at a controlled temperature, with daily pump-overs of the cap of fermenting wine. After fermentation, the wine remains in stainless steel tanks and is bottled in April-May. It is recommended to drink the wine within 3-4 years. The grapes grow on clay soils with an average lime content.

Elio Grasso is an Italian winery from the Piedmont region. The Grasso family has always been associated with viticulture in this region, but only resumed active wine production in 1980. The winery is managed by Elio Grasso and is located in northwestern Italy, about an hour's drive from Turin. In addition to the vineyards, Elio Grasso has owned a modern wine cellar since 2007, which is 100 meters long and equipped with French and Slavonian oak barrels. The winery's total vineyard area is 18 hectares. Grape varieties such as Dolcetto, Barbera, and Nebbiolo are used in the production of the wines. Elio Grasso produces approximately 90,000 bottles of wine annually.
