44 months on the lees — that is not a matter of course for German sparkling wine, and you can taste it. The Wildgraf Pinot Brut Nature from the Prinz Salm winery on the Nahe is a Grauburgunder sparkling wine without dosage: no added sugar, no compromise, but a depth that leaves many entry-level Champagnes behind.

The Weingut Prinz Salm is one of the most traditional businesses on the Nahe. The region between the Hunsrück and the North Palatinate Uplands produces mineral-rich soils of slate, sandstone, and porphyry — a foundation that gives dry wines structure and tension. The Grauburgunder provides the necessary body here without losing freshness.

After classic bottle fermentation (Méthode champenoise) and long aging on the lees, a fine, persistent perlage appears in the glass. On the nose, brioche, quince, and a hint of toasted almond. On the palate, taut, with lively acidity and a long, salty finish — Brut Nature here means true dryness without sharpness.

Goes well with oysters, grilled turbot, or a strong goat cheese. Also a good choice as an aperitif with substance. Serving temperature: 8–10 °C.

The German winery Prinz Salm is now managed in the 32nd generation and is located in Wallhausen in the Nahe region. It was probably founded around the year 1200. The owner of the winery is Michael Prinz zu Salm-Salm and calls 18 ha of vineyards his own. The soils of the vineyards mainly consist of green slate. In addition to the primarily grown grape variety Riesling, Pinot Blanc, Pinot Gris, Blanc de Noir or even Pinot Noir grapes are also processed into wines at the Prinz Salm winery. The best locations include, for example, the Wallhäuser Johannisberg or the Binger Scharlachberg. Up to 120,000 bottles of wine are produced here annually.
