Cornas Chante-Perdrix AC 0.75L

Cornas is the most uncompromising wine-growing region of the northern Rhône — and Chante-Perdrix from Delas shows why: single-varietal Syrah from steep, fully south-exposed terraces whose soils consist of silty deposits and are held by old dry-stone walls. The name means "singing partridges" and fits the wild, characterful nature of this appellation.

Delas is one of the great Négociant houses of the Rhône, but in Cornas it works with carefully selected parcels and hand-picking. Syrah on this granite and silt subsoil develops a depth that clearly differs from softer southern Rhône styles: darker fruit, more structure, more bite.

In the glass, the wine shows dark blackberry and black olive, plus violets, white pepper and a mineral undertone. The tannins are firm and present, the acidity gives the wine backbone. The finish is long, spicy, with a slightly smoky note.

Best served at 16–18 °C. Pairs with braised leg of lamb with herbs of Provence, wild boar ragout or a mature Cantal. Anyone opening it now should decant it for at least an hour.
