The Cold Creek Vineyard in the Columbia Valley is one of the most famous single vineyards in the Pacific Northwest — a vineyard that has supplied Château Ste. Michelle exclusively since the 1970s and is known for its extraordinary ripeness and structure in Cabernet Sauvignon. The winery itself is the oldest in Washington and has significantly contributed to the region being considered a serious address for American red wine today.

In the glass, this Cabernet Sauvignon shows dark sweet cherry and ripe blackberry, underpinned by notes of dark chocolate, tobacco, and a hint of cedar wood. On the palate, it appears round and dense, with soft tannins and a long, warm finish — typical of the continental warmth of the Columbia Valley, which allows the grapes full ripeness without overloading.

Serve it at 16–18 °C with an entrecôte with grilled tomatoes, braised lamb loin, or ripe hard cheese with walnut bread. For those who like it sweeter: a dark chocolate cake harmonizes surprisingly well with the cocoa notes in the wine.
