Bollinger Special Cuvée Brut GP

The Special Cuvée is Bollinger's entry-level wine – and simultaneously a benchmark for the house style. Pinot Noir dominates the blend at around 60%, complemented by Chardonnay and Pinot Meunier from over 85% Premier and Grand Cru vineyards. A portion matures in small oak barrels, and reserve wines from up to 15 vintages are incorporated into the blend – hence the unusual depth for a non-vintage Champagne.

Golden in the glass, with fine bubbles. The nose offers aromas of baked apple, apple compote, peach, and a hint of brioche. On the palate, it displays structure and weight, a creamy texture, notes of pear, fresh nuts, and spices, and a long finish.

Serving temperature 8–10 °C. Goes well with sushi, oysters, scallops, poultry or aged Parmesan – but also works as an aperitif on its own.

Bollinger Champagne

Bollinger is not a champagne that explains itself – it reveals itself. Since 1829, the house in Aÿ has operated according to the same principles: meticulous craftsmanship, Pinot Noir at its core, and maturity as a mark of quality.

What sets Bollinger apart from many others: The wines are vinified in genuine oak barrels – a process that hardly anyone else undertakes anymore. Riddling and disgorging are done by hand. No shortcuts, no simplifications.

Whether the approachable Special Cuvée or the legendary Vieilles Vignes Françaises from pre-phylloxera vines – there is real attitude in every glass.
