The name Bollinger stands in Champagne for a style that focuses on substance: full-bodied, complex, with a high Pinot Noir portion — and for over five decades inextricably linked with James Bond. This limited 007 edition is the visible sign of a partnership that began in 1973 with Live and Let Die and has continued through dozens of missions.
Bollinger is a family house in Aÿ, in the heart of the Montagne de Reims, which has relied on independence since 1829 — no corporation, no compromises on style. The cuvée is based on Pinot Meunier from Champagne, a grape variety that gives the blend fullness, red fruit, and a certain accessibility. Typical for Bollinger is the aging in a high proportion of older reserve wines, which give the champagne depth and consistency.
In the glass, it shows a golden hue with a fine, persistent perlage. Aromas of red apple, brioche, and a hint of toasted almond. On the palate, full-bodied, with a well-embedded acidity and a long, slightly spicy finish — not a light aperitif sparkling wine, but a champagne with attitude. Serving temperature: 8–10 °C. Pairs with lobster bisque, pan-fried turbot, or a classic beef tartare — and of course with the moment that demands a special bottle.
