Appassimento Negroamaro Passito

The Appassimento from the Conte di Campiano estate is made from 100% Negroamaro Passito grapes. The grapes are dried on the vines for three weeks before being harvested by hand at the end of September / beginning of October. This is followed by maceration on the skins to extract the color and capture the complex aromas.

In the glass, the wine shows a brilliant ruby red color with orange tones. Intense and complex aromas unfold on the nose with notes of ripe fruit and herbs. On the palate, the wine has balanced, delicate tannins and a light almond taste on the finish. This wine is wonderful with spicy pasta dishes, red meat, or aged cheese.

Good aroma but slightly sweet, just semi-dry

I bought the wine from the eBay dealer vinoscout. It turned out, however, that the wine is not dry as stated in the specifications, but semi-dry. The wine tastes slightly sweet. Anyone who likes semi-dry wines takes no risk here.

Dry and full-bodied, with intense aromas of ripe fruit and herbs. The tannins are soft and delicate; the finish shows a fine almond note — typical for the Passito method, where the grapes dry on the vine for three weeks before harvest.

What does this wine pair best with?

It is a solid companion to spicy pasta dishes with ragout, to lamb or game, but also to mature Pecorino. The richness of the wine handles strong flavors on the plate well.

At what temperature should I serve it?

Ideally between 16 and 18 °C. Straight from the cellar, it is often too cool — leaving it at room temperature for about 20 minutes is usually enough.

Is the wine really dry, even though it is made from dried grapes?

Yes. Passito refers to the drying method of the grapes, not the residual sugar in the finished wine. Here, the concentrated must was fully fermented — the result is a dry, but particularly full-bodied red wine.

How should I store the bottle?

Lying down, dark, and at a constantly cool temperature — ideally between 12 and 15 °C. Once opened, it keeps well-sealed in the fridge for another two to three days.

Daylight caressed the hills, bathed the profile of a castle, the steep roofs of the small, dark houses, the white paths, and the fertile farmland, and the gentle wind scattered itself against the stillness of the sky.

The landscape, the light scent of the must that reached his nose, and the peace in the time he felt advised him to find his home in this land. And so it came to be that from that day on, the people of the place called him CONTE DI CAMPIANO...
