Chenin Blanc from Franconia — that is rare, and Christian Stahl's »Steinmauer« shows why this grape variety works here: clear, mineral, with a depth of fruit that does not seem intrusive.

Christian Stahl manages his vineyards in Franconia with a focus on single-varietal wines that reflect the character of the soil. The name »Steinmauer« (stone wall) says it all: stony soils shape the minerality that distinguishes this Chenin Blanc from a purely fruit-driven style.

In the glass, it glows in a bright yellow. The nose shows mirabelle plum and white peach, plus a subtle exotic note — guava or ripe pineapple — and underneath, a clear mineral streak, almost like wet slate. On the palate, it is dry and taut, with a lively acidity that keeps the fruit in balance. The finish is medium-long, spicy, and marked by a fine salinity.

Good with goat cheese, asparagus with hollandaise sauce, or fried sole fillet. Serving temperature: 10–12 °C.

Christian Stahl

Christian Stahl is not as bad as his name might suggest. He wants nothing to do with Franconian winemaker folklore – he thinks "out of the box". When he took over his parents' business in Auernhofen, he made a name for himself not only in the wine sector but also in marketing.

His basic line "Nachschlag" shows a perfect balance between fun and craftsmanship. Noble wines with structure and tension – the result of 1,000 hours of manual labor. In 2018, the FAZ named him "Winemaker of the Year".

On 30 hectares in the Tauber Valley, characterized by shell limestone and gypsum keuper, wines grow with minerality and a pinch of saltiness. Modern, idiosyncratic, Franconian – at the highest level.
