
Sibona Grappa Riserva Botti da Rum
A mature grappa from Piedmont, which goes far beyond classic pomace distillates due to its two-stage barrel aging.
The Sibona distillery in Canale d'Alba is one of Piedmont's most traditional grappa producers. For generations, the family has relied on slow steam distillation – a method that preserves the volatile aromas of the pomace and maintains its delicate fruitiness. The Riserva Botti da Rum is initially aged in oak barrels and then finished in ex-rum casks from renowned producers. This leaves a distinct mark on the glass.
On the nose, dried figs, vanilla, and a hint of raw cane sugar – the rum cask notes layer over the classic grappa spice of pepper and bitter orange. Warm and full-bodied on the palate, with a smooth texture unusual for aged grappa. The finish reveals caramel, dark chocolate, and a touch of wood spice – long and rounded.
Neat at room temperature, ideally in a wide-bowled grappa glass. Pairs well with dark chocolate, roasted nuts, or a strong espresso – a classic digestif moment after a sumptuous meal.
