A mature grappa made from Barolo pomace — that means: the base material comes from Nebbiolo grapes of the Langhe, the raw material for one of Italy's most complex red wines. Five years of barrel aging transform the distillate into something fundamentally different from a young, clear grappa.
Sibona is a family-run company from Canale in Piedmont that has relied on traditional distillation for generations. The distillery uses the classic alembic method and sources its pomace directly from the Barolo winegrowers' region — short distances, fresh raw material, careful handling.
After five years of aging in wood, the grappa displays a deep amber color in the glass. The bouquet offers aromas of roasted fruit, tobacco, and mature oak. On the palate, the grappa is significantly rounder and fuller-bodied than younger distillates: the typical grappa sharpness recedes, replaced by spicy notes with a long, warm, and spicy finish.
Serving suggestion: Neat at room temperature — in a bulbous grappa or small cognac snifter. Ideal after a long dinner, with dark chocolate or strong hard cheese. No ice, no mixing — this level of maturity deserves to be enjoyed neat.
