A mature grappa from the heart of Piedmont — precisely distilled, aged twice in wood, with the dignity of Nebbiolo in its portfolio.
The Sibona family business has been distilling grappa for generations in Canale d'Alba, in the triangle between Barolo, Barbaresco, and Roero. This grappa is made exclusively from fresh pomace of Nebbiolo grapes from the Barolo DOCG region—the foundation for one of Italy's most sophisticated grappas. The pomace is distilled immediately after the harvest to preserve the aromatic compounds before they evaporate.
The two-stage oak aging process is the heart of this bottling: First, the grappa matures in Austrian oak barrels, which impart structure and a mild woody spice to the distillate. This is followed by a finish in barriques, which provides depth and the characteristic amber hue. In the glass, it displays a light amber color. The nose offers aromas of dried plum, vanilla, and a hint of roasted walnut. On the palate, it has a velvety texture, subtle spice, and a long, warm finish without any harshness.
Neat at room temperature after a dinner with Brasato al Barolo or dark chocolate. Also as a digestif alongside a double espresso.

Sibona – an Italian distillery in Piedmont, near Alba. Founded in 1908. A special detail: Sibona holds distilling license No. 1 – the oldest official distilling license in Italy. For their grappas, only grapes from the Langhe and Rohero regions are used, grown at an altitude of 150 to 250 meters.
