
Pinot Brut
White-vinified Pinot Noir from 40-year-old vines from the Roxheimer Höllenpfad im Mühlenberg – a VDP.Grosse Lage on the Nahe. Hand-picked, fermented, and aged in a 60-year-old large wooden barrel, followed by classic bottle fermentation according to the Méthode Champenoise. At least 50 months of yeast aging, then hand-riddled and hand-disgorged.
In the glass: fine red berry fruit, yeast pastry, a hint of nougat. Creamy perlage, precise acidity, dry and salty finish. The long yeast aging gives the sparkling wine a depth that goes far beyond the usual level.
Strong as an aperitif – also with grilled salmon, scallops, or mild goat cheese. Serving temperature: 8–10 °C.
