Nou Crémant Brut PIWI Collection

The Crémant is made exclusively from Piwi grapes – varieties that require minimal pesticides and are considered the future of organic viticulture. Production takes place in-house, without external sparkling wine production. The Crémant is made using the traditional méthode champenoise. The Piwi varieties Souvignier Gris, Johanniter, and Cabernet Blanc were hand-harvested. Through bottle fermentation and extended lees aging of 9-13 months, it develops a distinctive quality: elegant, with light blackcurrant notes, hints of brioche, and buttercream.

Schmidt Winery

Schmidt Winery – a pioneer of organic viticulture in Germany. Since its founding in 1987, the winery has operated without pesticides. Waltraud and Richard Schmidt laid the foundation, and today Helen and Martin run the estate in the second generation – with the same conviction. Ecovin certification followed in 1993, and today the winery focuses on PIWI varieties: fungus-resistant grape varieties such as Léon Millot, Cabernet Blanc, and Souvignier Gris.
