Chardonnay is now cultivated all over the world. As a Vin de Pays d'Oc, it presents itself as sun-drenched and authentic. Fragrant aromas of pineapple, white peach, and hazelnut are finely balanced by a subtle minerality. On the palate, it offers a rich, full body with lush fruit, soft and rounded with a long finish. The grapes come from vineyards near Limoux, close to Carcassonne. The grapes for this Vin de Pays d'Oc are selected with the utmost care by Baron Philippe de Rothschild's oenologists from the vineyards of long-standing partner growers. The grapes are destemmed and gently crushed, then left in contact with the skins for several hours to extract valuable aromas. The must is chilled to allow the lees to settle. Temperature-controlled fermentation then follows to preserve the fresh aromas. The wine is aged exclusively in stainless steel.

Baron Philippe de Rothschild – a name synonymous with great wines worldwide. Founded in 1853 with the purchase of Château Brane-Mouton, the estate was elevated to the exclusive ranks of "Premiers Crus" in 1973 – an honor shared by only five wineries in France. Today, the family business boasts six locations, the majority in France, along with estates in California and Chile. A total of 1,200 hectares of vineyards are cultivated, planted with Merlot, Chardonnay, Cabernet Sauvignon, and other grape varieties. At the most prestigious site, Mouton Cadet, 20 million bottles are produced annually.
