Powerful yet surprisingly precise: Martin Waßmer's Grauburgunder "SW" shows what Baden Pinot Gris can do at the highest level.
Martin Waßmer manages his vineyard in southern Baden, near Müllheim at the foot of the Black Forest. The "SW" vineyard site is characterized by heavy, mineral-rich soils that impart structure and depth to the Pinot Gris. Waßmer is one of the region's most renowned Pinot Gris producers – his wines are known for their density, depth of maturity, and meticulous craftsmanship.
In the glass, this is a dense, full-bodied wine with real structure. The aromas range from ripe papaya and buttercup to a distinctive roasted onion note in the long finish – unusual, yet memorable. On the palate, it offers plenty of extract, a fine, creamy texture, and a delicate, silky tannin structure typical of Pinot Gris. The finish is slightly tart, with noticeable warmth and invigorating tension.
Serving temperature: 12–14 °C. Pairs well with pan-fried calf's liver with onions, grilled salmon, or a robust Munster wine. Also a reliable choice with poultry in cream sauce. Ready to drink now, but will keep for another 3–5 years.
