The Henschke winery is one of the most renowned addresses in South Australia. Family-owned for over 150 years, it manages sites in the Barossa and Eden Valley that are known for their cool nights and mineral soils. The Cyril Cabernet Sauvignon bears the first name of Cyril Henschke, who decisively shaped the winery in the middle of the 20th century.
In the glass, the 2021 shows a dark garnet red with ruby red reflections. In the nose, cassis, blackberry compote, and violets, plus herbs like thyme, bay leaf, and dried sage. In the background, cedar wood, nutmeg, dark chocolate, and a hint of tobacco. On the palate, concentrated and precise: plum, red currant, fresh acidity. The fine-meshed, cocoa-containing tannins provide structure, the finish is long, spicy, elegant.
Serving temperature: 17–18 °C. Pairs well with braised lamb shoulder, beef fillet with herb crust, or mature cheddar.
