Cyril Cabernet Sauvignon

Cabernet Sauvignon from the Eden Valley – at Henschke, this is not a mass-produced product, but a wine with a clear signature: dark fruit, herbal spice, structure.

Henschke Winery is one of South Australia's most prestigious estates. Family-owned for over 150 years, it cultivates vineyards in the Barossa and Eden Valleys, known for their cool nights and mineral-rich soils. The Cyril Cabernet Sauvignon is named after Cyril Henschke, who played a pivotal role in shaping the winery in the mid-20th century.

In the glass, the 2021 vintage displays a dark garnet red with ruby highlights. The nose offers aromas of cassis, blackberry compote, and violets, along with herbs such as thyme, bay leaf, and dried sage. In the background, notes of cedar, nutmeg, dark chocolate, and a hint of tobacco emerge. On the palate, it is concentrated and precise: plum, red currant, and fresh acidity. The finely structured, cocoa-rich tannins provide structure, and the finish is long, spicy, and elegant.

Serving temperature: 17–18 °C. Drinking window: 2025–2033. Pairs well with braised lamb shoulder, herb-crusted beef fillet, or mature cheddar.
