Cynar Artichoke Bitter Liqueur

Cynar is an Italian herbal liqueur made with artichokes—bittersweet, with a pronounced bitterness that clearly places it in the tradition of northern Italian amari. The brand is now part of the Campari portfolio and has remained a classic of aperitivo culture since its introduction in the 1950s.

The base is a herbal extract made from 13 botanicals, including fresh artichokes as the key aroma. In the glass, Cynar displays a dark amber color. On the palate, it opens with caramel and dried herbs, before the characteristic bitter note—softer than Fernet, less sweet than Amaro Montenegro—defines the long, slightly earthy finish. The texture is medium-bodied and not sticky.

Neat over ice, Cynar is an uncomplicated digestif after a heavy meal. With soda and an orange slice, it makes a light aperitif.
