Even today, Campari is produced according to Gaspare Campari's closely guarded original recipe from 1862, using 86 roots, herbs, and spices. These include quinine and bitter herbs, rhubarb, pomegranate, spices, ginseng, citrus oil, and orange peel. One of the main ingredients is cascarilla bark. For a long time, the intense red color was achieved using carmine (E 120), a natural food coloring derived from cochineal insects. In 2006, the company decided to switch to artificial colorings, and according to company statements, only the colorings tartrazine (E 102), azorubine (E 122), and brilliant blue FCF (E 133) are used today. Therefore, the product sold in Germany no longer contains any ingredients of animal origin.
