Collavini Dei Sassi Cavi Chardonnay
A Chardonnay from Friuli that shows what the region in northeastern Italy can do with the grape variety: not a butter bomb, but a wine with clear contours and southern alpine freshness.
Collavini is one of Friuli's most renowned wineries. The family has been cultivating grapes for generations in the Colli Orientali del Friuli DOC – limestone and marl soils that impart minerality and vibrancy to the wines. The Dei Sassi Cavi (roughly translated as "the hollow stones") embodies this character in its name.
In the glass, it displays aromas of ripe citrus fruit, a hint of yeast, and a subtle mineral undertone. On the palate, it remains lively despite a certain richness – the acidity maintains balance without being harsh. The finish is longer than is typical for simple estate Chardonnays.
