Chateau Gombaude Guillot

Pomerol is one of the smallest and most coveted appellations of the Bordelais — and Château Gombaude-Guillot is one of the estates that has justified this reputation for generations. Family-owned since 1860, the winery farms its sites in the heart of the Pomerol plateau, where heavy clays and iron-rich crasse-de-fer subsoil give the Merlot an unmistakable structure.

Since 1998, Gombaude-Guillot has been working according to the principles of organic farming; since 2006, the estate has held Biodyvin certification — a clear commitment to manual labor in the vineyard and to the expression of the terroir without conventional aids. In the glass, this shows in a density and clarity that synthetically produced wines rarely achieve.

The Merlot brings dark blackberry, plum, and a hint of graphite; underneath lies an earthy, almost mossy depth that is typical for the best Pomerol sites. The tannins are present but velvety integrated, the acidity keeps the wine lively, the finish is long and spicy.

Served at 16–17 °C, it unfolds particularly well with braised beef, leg of lamb with herbs of Provence, or a mature Époisses. For those who don't need an occasion: a good glass and a quiet evening are quite enough.
