Chablis 1er Cru, Vaillons, La Chablisienne

Chablis as it should be: not an ounce of excess, but plenty of substance. The Vaillons Premier Cru from La Chablisienne shows what Kimmeridge limestone from the Serein Valley can extract.

La Chablisienne is one of the oldest winegrowers' cooperatives in the region—founded in 1923, it now has around 300 members and over a quarter of the total Chablis vineyard area. The Vaillons vineyard boasts one of the most renowned Premier Cru climates: southwest exposure, shallow soils of petrified oyster limestone (Kimmeridgian), and short ripening times due to the continental climate of northern Burgundy.

In the glass: citrus zest, white peach, and a hint of fennel on the nose. On the palate, taut and precise—the acidity is lively without being sharp. Beneath this lies a salty, almost iodine-like minerality, typical of the Vaillons vineyard. The finish is long, clean, and characterized by elegant tension.

Serving suggestion: 10–12 °C. Drinking window 2025–2030. Pairs well with oysters, scallops with lemon butter, pan-fried turbot or a mature Loire goat cheese.

La Chablisienne

In 1923, 250 winegrowing families joined forces. This led to the creation of La Chablisienne , the most important winegrowers' cooperative in the Chablis region.

Today, the members cultivate over 1200 hectares of vineyards – about a quarter of the entire Chablis region. The only star here is Chardonnay .

The wines are crisp, mineral, and taste of citrus and white blossoms. A piece of living winemaking history that you simply must taste.
