Blanc de Noir BN

Blanc de Noirs is exactly what it sounds like: a light wine made from red grapes, sometimes with a delicate pink hue. During the gentle pressing of red grapes, the white juice is extracted from the grape skins. The grape skins, also called must, are then immediately separated from the juice to preserve its distinctive color. There are rules governing its production; the most important stipulation is that it must be made from 100% red grape varieties, though there is no specific color requirement. Blanc de Blancs are typically light summer wines that also offer a high rate of acid absorption.
