The Aristargos is the great white wine from David & Nadia Sadie – a cuvée that shows what old bush vines in the Swartland can achieve if you give them time and peace.

David and Nadia Sadie work in the Swartland, one of the most exciting wine regions in South Africa. Their vineyards consist of old, non-irrigated bush vines that are deeply rooted in the granitic and slate-containing soils of the region. The Aristargos is a white wine cuvée from these old vine sites – spontaneously fermented, aged with minimal intervention in the cellar.

In the glass, it shows a clear golden yellow color. On the nose: dried herbs, white peach, beeswax, and a mineral salt line that reminds of the dry granite soils of the Swartland. On the palate, dense texture, lively acidity, a long, slightly nutty finish. No wood that dominates – instead, depth through origin.

Drinking temperature: 12–14 °C. Pairs with roasted monkfish with caper butter, ripe goat cheese, or a risotto with saffron and seafood.
