Aristargos is the great white wine from David & Nadia Sadie – a cuvée that shows what old bush vines in the Swartland can achieve when given time and peace.
David and Nadia Sadie work in the Swartland, one of South Africa's most exciting wine regions. Their vineyards consist of old, unirrigated bush vines deeply rooted in the region's granitic and schist soils. Aristargos is a white wine blend from these old vines – spontaneously fermented and aged with minimal intervention in the cellar.
In the glass, it displays a clear, golden-yellow color. On the nose: dried herbs, white peach, beeswax, and a mineral saltiness reminiscent of the dry granite soils of the Swartland. On the palate, a dense texture, lively acidity, and a long, slightly nutty finish. No dominant oak – instead, depth derived from its origin.
Serving temperature: 12–14 °C. Drinking window: now until 2030+. Pairs well with pan-fried monkfish with caper butter, mature goat cheese, or a saffron and seafood risotto.
